Le congee est un plat polyvalent, \u00e0 la fois simple et parfois extravagant, selon les ingr\u00e9dients. Le congee est une bouillie de riz savoureuse, principalement compos\u00e9e de riz et d&rsquo;eau, et aromatis\u00e9e avec diff\u00e9rentes prot\u00e9ines et herbes. Le congee de homard \u00e0 cuisson lente est pr\u00e9par\u00e9 \u00e0 partir d&rsquo;un bouillon de fruits de mer aromatique, ce qui lui conf\u00e8re une consistance cr\u00e9meuse et une saveur intense.     <\/p>\n\n<p>Les homards du Maine ont une saveur douce et succulente. Nous utilisons des queues de homard du Maine fournies par Lobster Anywhere, une entreprise de fruits de mer situ\u00e9e dans le Maine. Nous utilisons des coquilles Saint-Jacques s\u00e9ch\u00e9es produites par le groupe Edoya au Japon, sp\u00e9cialis\u00e9 dans les produits de la mer s\u00e9ch\u00e9s. Les coquilles Saint-Jacques s\u00e9ch\u00e9es sont une riche source de prot\u00e9ines et ont une saveur prononc\u00e9e. Nous s\u00e9lectionnons un riz \u00e0 sushi biologique de Lundberg Family Farms en Californie, un riz nutritif, \u00e0 grain court et collant. Les grains de poivre blanc, un ingr\u00e9dient parfait pour les plats de couleur claire, ont des saveurs terreuses et piquantes. Passez en revue l&rsquo;\u00e9tape 3<br\/>Riz \u00e0 sushi biologique &#8211; 1\/3 de tasse (65 grammes)<br\/>Queues de homard &#8211; 2 (6-7 onces chacune)<br\/>Coquilles Saint-Jacques s\u00e9ch\u00e9es &#8211; 1 once (28 grammes)<br\/>Gingembre frais biologique &#8211; 1 once (28 grammes)<br\/>Oignon vert &#8211; 2 tiges<br\/>Huile d&rsquo;olive &#8211; 2 cuill\u00e8res \u00e0 soupe<br\/>Poivre blanc entier &#8211; 1\/4 de cuill\u00e8re \u00e0 caf\u00e9 (fra\u00eechement moulu)<br\/>Sel de mer &#8211; 1\/2 cuill\u00e8re \u00e0 caf\u00e9 <\/p>\n\n<h3 class=\"wp-block-heading\">\u00c9tape 1<\/h3>\n\n<p>Dans un bol, faites tremper les coquilles Saint-Jacques s\u00e9ch\u00e9es dans 4 tasses d&rsquo;eau chaude pendant 30 minutes. Coupez les queues de homard en deux et retirez la chair. Coupez la chair de homard en morceaux de 1 pouce, puis r\u00e9servez au r\u00e9frig\u00e9rateur. \u00c9mincez l&rsquo;oignon vert et coupez 1\/3 du gingembre en julienne. Coupez le reste du gingembre en tranches.      <\/p>\n\n<h3 class=\"wp-block-heading\">\u00c9tape 2<\/h3>\n\n<p>Dans la po\u00eale en fonte peu profonde, m\u00e9langez l&rsquo;huile d&rsquo;olive, les queues de homard, les 2\/3 des oignons verts et les tranches de gingembre, puis faites sauter le tout pendant quelques minutes. Ajoutez les p\u00e9toncles avec l&rsquo;eau et laissez mijoter \u00e0 feu doux pendant 30 minutes. Filtrez le bouillon de fruits de mer \u00e0 l&rsquo;aide d&rsquo;un tamis doubl\u00e9 d&rsquo;une fine \u00e9tamine.  <\/p>\n\n<h3 class=\"wp-block-heading\">\u00c9tape 3<\/h3>\n\n<p>Dans une marmite japonaise en terre cuite, m\u00e9langez le bouillon de fruits de mer et le riz, portez \u00e0 \u00e9bullition et laissez cuire \u00e0 feu moyen-doux pendant 30 minutes.
