Il y a plusieurs si\u00e8cles, la cuisine du Sichuan connu un r\u00e9veil culinaire lorsque des explorateurs europ\u00e9ens import\u00e8rent en Asie les piments du Nouveau Monde. La cuisine du Sichuan a un caract\u00e8re particulier, influenc\u00e9e par le climat chaud de la r\u00e9gion et par la diversit\u00e9 des ingr\u00e9dients et des diverses techniques de cuisson utilis\u00e9s. <br\/>   <\/p>\n\n<p>Les Piments Rouges et les Grains de Poivre du Sichuan (hu\u0101 ji\u0101o \u82b1\u6912) sont des ingr\u00e9dients principaux de la cuisine du Sichuan. Les Grains de Poivre du Sichuan, \u00e9galement appel\u00e9s poivrons du Sichuan, sont des \u00e9pices parfum\u00e9es r\u00e9colt\u00e9es dans un arbuste de la famille des agrumes. Les deux esp\u00e8ces comestibles sont des Poivriers rouge et vert du Sichuan, caract\u00e9ris\u00e9s par leur saveur citronn\u00e9e, leur puissant ar\u00f4me et la sensation d\u2019engourdissement du palais qu\u2019ils induisent. \u00c0 Chengdu, capitale de la Province du Sichuan, nous d\u00e9couvrons d\u2019extraordinaires vari\u00e9t\u00e9s d\u2019\u00e9pices et y achetons, a l\u2019intention de notre recette, du Poivre rouge du Sichuan.    <\/p>\n\n<p>Nous utilisons des Piments Rouges S\u00e9ch\u00e9s m\u00e9lang\u00e9s \u00e0 des \u00e9pices, offerts en cadeau par le chef du restaurant de notre h\u00f4tel. Nous s\u00e9lectionnons la Sauce Gastronomique Judy Fu \u00ab Hot Oil \u00bb, disponible dans les march\u00e9s asiatiques aux \u00c9tats-Unis, contenant du piment rouge et une p\u00e2te de f\u00e8ves \u00e9pic\u00e9es. Comme poisson, nous s\u00e9lectionnons un Bar Chilien pour sa saveur douce et sa texture cr\u00e9meuse qui compl\u00e9mentent si bien les herbes parfum\u00e9es et les \u00e9pices du Sichuan. Ajoutez l\u2019eau, les champignons shiitake, les piments rouges s\u00e9ch\u00e9s, les Grains de Poivre Sichuan et la p\u00e2te de piments-f\u00e8ves, puis laissez bouillir pendant 10 minutes \u00e0 feu moyen. <\/p>\n\n<h3 class=\"wp-block-heading\">\u00c9tape 3<\/h3>\n\n<p>Ajoutez le poisson, les oignons verts et le sel, puis laissez mijoter pendant quelques minutes. <\/p>\n\n<h3 class=\"wp-block-heading\">\u00c9tape 4<\/h3>\n\n<p>Dans une petite casserole, faites chauffer l\u2019huile de s\u00e9same. Servez le poisson dans des bols de taille moyenne et couvrez avec l\u2019huile de s\u00e9same chaude. <\/p>\n\n<h3 class=\"wp-block-heading\">\u00c9tape 5<\/h3>\n\n<p>Saupoudrez le poisson de coriandre fra\u00eeche et savourez les ar\u00f4mes des \u00e9pices du Sichuan.
