Le Yuba est une sp\u00e9cialit\u00e9 japonaise, couramment produite \u00e0 Kyoto et incorpor\u00e9e dans de nombreux plats. Le Yuba est une peau de tofu obtenue en chauffant du lait de soja, laissant une fine couche se former sur le dessus du lait, puis en la retirant d\u00e9licatement avec des baguettes ou de longues brochettes.   <\/p>\n\n<p>Le Yuba est tr\u00e8s nutritif, a une texture d\u00e9licate et une couleur jaune cr\u00e8me. Il peut \u00eatre consomm\u00e9 sous forme de sashimi ou de sushi, de rouleaux en peau de tofu frits ou de Yuba frais servi avec une sauce. Dans notre recette, nous pr\u00e9parons du lait de soja frais \u00e0 partir de graines de soja s\u00e9ch\u00e9es sans OGM fournies par Laura Soybeans (laurasoybeans.com), une ferme de l\u2019\u00c9tat de l\u2019Iowa, aux \u00c9tats-Unis. Apr\u00e8s avoir chauff\u00e9 le lait de soja, plusieurs couches de peau de tofu peuvent \u00eatre retir\u00e9es, variant tant en texture qu\u2019en \u00e9paisseur en fonction du temps allou\u00e9 \u00e0 la peau de tofu pour se former. La premi\u00e8re couche ayant une texture cr\u00e9meuse est nomm\u00e9e Kumiyage Yuba.     <\/p>\n\n<p>Le Yuba frais est g\u00e9n\u00e9ralement servi avec une sauce ponzu comprenant un peu de wasabi ou bien avec une sauce \u00e0 base de dashi. Notre Sauce Mentsuyu, pr\u00e9par\u00e9e avec du kombu dashi, du mirin, du sak\u00e9 et de la sauce soja, compl\u00e8te la saveur unique du Yuba. Les ingr\u00e9dients de la sauce sont disponibles aux \u00c9tats-Unis dans les march\u00e9s asiatiques. Laisser mijoter ensuite, \u00e0 feu moyen pendant quelques minutes, sans porter \u00e0 \u00e9bullition, puis retirer le Kombu. <\/p>\n\n<h3 class=\"wp-block-heading\">\u00c9tape 2<\/h3>\n\n<p>Pr\u00e9parer la Sauce Mentsuyu : Dans une casserole, m\u00e9langer 1 tasse de Kombu Dashi avec du mirin, du sak\u00e9 et de la sauce soja, puis laisser mijoter pendant quelques minutes. Note : Le Kombu Dashi restant peut-\u00eatre utilis\u00e9 pour pr\u00e9parer des soupes ou des sauces japonaises classiques.  <\/p>\n\n<h3 class=\"wp-block-heading\">\u00c9tape 3<\/h3>\n\n<p>Pr\u00e9parer le Lait de Soja : Laver et faire tremper les graines de soja dans l&rsquo;eau froide pendant une nuit (12 heures). Rincer ensuite les graines de soja \u00e0 l&rsquo;eau froide, mettre dans un m\u00e9langeur avec 2 tasses d&rsquo;eau froide, puis m\u00e9langer sur r\u00e9glage \u00ab liqu\u00e9fier \u00bb pendant quelques minutes jusqu&rsquo;\u00e0 ce que la texture devienne lisse. Faire bouillir dans une cocotte 4 tasses d&rsquo;eau, puis ajouter le m\u00e9lange de soja. Laisser mijoter le lait de soja \u00e0 feu moyen-doux pendant 30 minutes, en remuant constamment pour \u00e9viter que le lait de soja ne br\u00fble. Laisser refroidir le lait pendant quelques minutes, puis placer un tamis sur une casserole ou un bol, couvrir d&rsquo;une \u00e9tamine et verser le lait de soja. Presser et s\u00e9parer le lait de soja liquide de la pulpe de soja (Okara). Note : L&rsquo;Okara est tr\u00e8s nutritif et peut \u00eatre utilis\u00e9 dans d&rsquo;autres recettes.      <\/p>\n\n<h3 class=\"wp-block-heading\">\u00c9tape 4<\/h3>\n\n<p>Pr\u00e9parer le Yuba Frais : Monter le bain-marie : faire chauffer l&rsquo;eau \u00e0 feu doux et laisser mijoter mais ne pas porter \u00e0 \u00e9bullition. Dans le haut du bain-marie verser le lait de soja. Attendre quelques minutes afin qu&rsquo;une peau de tofu se forme, puis d\u00e9tacher doucement les bords et retirer le Yuba frais avec les baguettes. Note : La peau de Tofu devient plus \u00e9paisse si on lui alloue plus de temps pour se former.   <\/p>\n\n<h3 class=\"wp-block-heading\">\u00c9tape 5<\/h3>\n\n<p>Servir le Yuba Frais avec une Sauce Mentsuyu encore chaude en trempette.
