Nous choisissons la Saucisse de Toulouse, saucisse de porc fra\u00eeche originaire du sud-ouest de la France, produite par Fabrique D\u00e9lices (un producteur de charcuterie artisanale aux \u00c9tats-Unis). Nous s\u00e9lectionnons la Graisse de Canard et les Cuisses de Canard Confites produites par Les Trois Petits Cochons (producteur de charcuterie artisanale \u00e0 New York). Dans une grande casserole en fonte, m\u00e9langez l&rsquo;eau fra\u00eeche, les haricots \u00e9goutt\u00e9s, les brins de thym frais, les feuilles de laurier et l&rsquo;oignon coup\u00e9 en deux. Portez \u00e0 \u00e9bullition, puis r\u00e9duisez le feu et laissez mijoter pendant 1 heure (le niveau d&rsquo;eau doit \u00eatre de quelques pouces au-dessus des haricots). Retirez l&rsquo;oignon, les feuilles de laurier et le thym. \u00c9gouttez les haricots bouillis et r\u00e9servez le liquide de cuisson.    <\/p>\n\n<h3 class=\"wp-block-heading\">\u00c9tape 2<\/h3>\n\n<p>Dans la po\u00eale, faites revenir les saucisses dans la graisse de canard jusqu&rsquo;\u00e0 ce qu&rsquo;elles soient dor\u00e9es et r\u00e9servez. Placez les cuisses de canard confites peau par-dessous, faites revenir jusqu&rsquo;\u00e0 ce que la peau devienne croustillante et r\u00e9servez.  <\/p>\n\n<h3 class=\"wp-block-heading\">\u00c9tape 3<\/h3>\n\n<p>M\u00e9langez les tomates, l&rsquo;ail, le sel et le poivre noir au m\u00e9langeur \u00e9lectrique, puis r\u00e9duisez en pur\u00e9e jusqu&rsquo;\u00e0 l&rsquo;obtention d&rsquo;une texture lisse. Combinez cette mixture de tomates avec le liquide de cuisson r\u00e9serv\u00e9 et avec le gras de canard restant dans la po\u00eale puis r\u00e9servez. <\/p>\n\n<h3 class=\"wp-block-heading\">\u00c9tape 4<\/h3>\n\n<p>Pr\u00e9chauffez le four \u00e0 350 degr\u00e9s Fahrenheit. Montez le cassoulet dans la grande casserole en fonte: d\u00e9poses les cuisses de canard confites et les saucisses au fond de la casserole, couvrez la viande avec les haricots et versez dessus uniform\u00e9ment la mixture de tomates. Placez le couvercle ou un papier d&rsquo;aluminium sur la casserole et faites cuire pendant 2 \u00e0 2 heures et \u00bd. Apr\u00e8s 1 heure de cuisson, ajoutez si n\u00e9cessaire un peu d&rsquo;eau pour que le cassoulet soit un peu humide.   <\/p>\n\n<h3 class=\"wp-block-heading\">\u00c9tape 5<\/h3>\n\n<p>Retirez le cassoulet du four et laissez reposer pendant 15 minutes. Servez en portions individuelles incluant des haricots, une saucisse et un morceau de viande de canard.
