The French culinary art greatly influenced the cuisines across Europe.\u00a0 Invented in the Brittany Region of France, the cr\u00eapes sucr\u00e9es are traditionally made with wheat flour, milk and eggs, while the savory cr\u00eapes sal\u00e9es are made with buckwheat flour, milk, eggs, butter and salt.\u00a0 The Polish Nale\u015bnik, influenced by the French cr\u00eape, is usually rolled with diverse jams or with farmer\u2019s white cheese sweetened with sugar.\u00a0 In Bieszczady, a beautiful region of Poland, we degust an inventive and uniquely-textured nale\u015bnik.\u00a0 The forests of Bieszczady are filled with wild blueberries (jagody), the main ingredient used to prepare the nale\u015bnik z jagodami.\u00a0 <\/p>\n\n\n\n

In the village of Wetlina in Bieszczady, the Chata W\u0119drowca (Inn and Restaurant) serves its own unique version of nale\u015bnik topped with blueberries or other fruit.\u00a0 Our Nale\u015bnik recipe, inspired by our visit to Bieszczady, uses the Roasted Barley Malt (Melanoidin 25\u00b0 L by Weyermann), available in a brewery supply stores in USA.\u00a0 We picked ourselves the wild blueberries in the Heather Meadows area, near Mount Baker in Washington State.\u00a0 Our Nale\u015bnik has a soft and crispy texture, and tastes divine with the fresh wild blueberries.<\/p>\n\n\n\n

All Purpose Flour \u2013 200 grams (7 ounces)
Granulated Sugar \u2013 20 grams (0.7 ounces)
Whole Milk \u2013 1 \u00bc cup (296 ml)
Eggs \u2013 2 
Roasted Barley Malt (Melanoidin 25\u00b0 L by Weyermann) \u2013 20 grams (0.7 ounces)
Olive Oil \u2013 1 cup (\u00bd cup for each Nale\u015bnik)
Wild Forest Blueberries \u2013 200 grams (7 ounces)
Powdered Sugar \u2013 to dust <\/p>\n\n\n\n

Step 1<\/h3>\n\n\n\n

In a spice or a coffee grinder, crush the roasted barley malt to powder.  In a saucepan, heat the milk, add the roasted barley and whisk thoroughly.<\/p>\n\n\n\n

Step 2<\/h3>\n\n\n\n

In a large bowl, combine the flour, granulated sugar, eggs and milk mixture.  Whisk all ingredients into a smooth texture.<\/p>\n\n\n\n

Step 3<\/h3>\n\n\n\n

In a cast-iron skillet, heat \u00bd cup of olive oil on the stovetop at medium-low temperature (375 degrees Fahrenheit).  Pour the batter through the funnel (\u00bd inch in diameter) in a zig-zag pattern and then a circular pattern into the hot oil. <\/p>\n\n\n\n

Step 4<\/h3>\n\n\n\n

Fry on each side until golden brown, then place the nale\u015bnik on the plate lined with a paper towel to drain the extra oil. Place the nale\u015bnik on a plate, add fresh wild blueberries on top and dust with powdered sugar.<\/p>\n\n\n\n
