Days 2-6 (add each day 30 grams of rye flour and 30ml of warm water and mix well).&nbsp; Note: The rye flour\u2019s natural yeast is activated when mixed with warm water, allowing the bacteria to thrive.&nbsp; The small bubbles develop starting at day 2 or 3.&nbsp; The rye leaven is ready around day 6 or 7, has a frothy texture and a pleasant smell.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Step 2<\/h3>\n\n\n\n<p>In a spice or coffee grinder, crush the roasted barley malts to powder.&nbsp; In a large bowl, mix all the ingredients, place the bread dough in a long rectangular Dutch oven and sprinkle some of the seeds and grains on top.&nbsp; Cover the lid of the Dutch oven and leave in a warm place to rise for 24 hours.&nbsp; &nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Step 3<\/h3>\n\n\n\n<p>Bake the bread in the oven for 50 minutes at 400 degrees Fahrenheit.&nbsp; Bake the bread 25 minutes with the lid on and 25 minutes without the lid.&nbsp; Note: Place the Dutch oven on the higher rack so the bread\u2019s bottom does not over burn.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Step 4<\/h3>\n\n\n\n<p>Remove the baked bread from the oven and the Dutch oven, and allow to cool down for a few hours or a day before serving.
