Use a food processor to puree the roasted whole eggplants (with their skin), the garlic, lemon juice, sea salt and the black pepper.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Step 2<\/h3>\n\n\n\n<p>Toast the pine nuts in the skillet until lightly golden.&nbsp; Remove the pomegranate arils and finely chop the parsley.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Step 3<\/h3>\n\n\n\n<p>Place the eggplant dip in the serving bowl, then sprinkle the roasted pine nuts, pomegranate arils and parsley on top.
