FLAVOROUS SPICY LEBANESE POTATOES; BATATA HARRA, LEBANON
Ingredients
Organic Yellow Potatoes – 5 medium size
Organic Garlic – 10 cloves
Fresh Cilantro – half of a bunch
Ground Cayenne Pepper – 1/2 teaspoon
Extra Virgin Olive Oil – 2 cups (473 ml) for frying + 3 tablespoons
Batata Harra – The Lebanese cuisine is basically a Mediterranean cuisine, loved and famed across the world. Batata Harra is a traditional spicy potato dish, prepared in Lebanon and other countries in the Middle East. Batata Harra consists of deep-fried potatoes mixed with sautéed garlic, fresh cilantro and ground chili pepper. In our recipe, we use Organic Yellow Potatoes cultivated by Fraserland Organics in Canada’s Province of British Columbia. We select a premium quality Extra Virgin Olive Oil imported from Lebanon. The mountainous terrain of Lebanon encompasses fertile lands where olive trees are cultivated since thousands of years. Lebanon produces a variety of high quality olive oils, a prominent ingredient in Lebanese cuisine. Our Batata Harra recipe preserves the natural sweetness of yellow potatoes, flavored with the fresh herbs.
Preparation Method
Step 1 – Peel and cut the potatoes lengthwise into ½ inch slices. Finely chop the garlic and the fresh cilantro.
Step 2 – In a large sauté pan, heat 2 cups of olive oil on medium heat on the stove. Deep-fry the potatoes until they have a slightly golden color and a crispy exterior texture.
Step 3 – In the meantime, sauté the garlic with 3 tablespoons of olive oil in the frying pan for less than a minute, then add the cilantro and the cayenne pepper. Remove from the heat.
Step 4 – Drain the potatoes with the strainer ladle (shake off the extra olive oil) and add the potatoes directly to the frying pan. Gently mix the potatoes with the herb-mixture, and then place them in shallow bowls. Sprinkle with chopped cilantro and serve immediately.
