Ingredients
Bluefin Tuna (Sashimi Grade) – 300 grams (0.660 pound)
White Onion – 1/4 small size
Green Onion – 1 stalk
Young Ginger – 15 grams
Roasted Macadamia Nuts – 30 grams (unsalted)
Sesame Oil – 1 tablespoon
Soy Sauce – 2 tablespoons
Red Alaea Sea Salt – to taste
Poke & Nuts – Hawaii is a tropical paradise and a major culinary destination. Poke is a traditional Hawaiian dish that comprises fresh raw fish, seaweed, vegetables and Hawaiian spices. The cuisine of Hawaii utilizes a variety of fresh seafood, nutritious seaweed and Red Alaea Salt, an unrefined sea salt combined with red alae volcanic clay found in the islands of Hawaii. Macadamia Nuts, indigenous to Australia, are widely cultivated in Hawaii. We select the Dry Roasted and Unsalted Macadamias produced by Mauna Loa, defined by their buttery texture, rich flavor and natural sweetness. The Young Ginger has a light and thin skin, a milder flavor, a tender texture and a floral aroma. We recommend using an organic Soy Sauce made with whole soy beans. Our Poke & Nuts is a harmonious combination of flavors and textures.
Preparation Method
Step 1 – Cut the tuna into 1/2 inch cubes. Slice thinly the green onion and cut the white onion into small cubes. Peel and cut the young ginger into little cubes.
Step 2 – Place the macadamia nuts in a plastic zipper bag, then use the flat part of a meat mallet to crush them into coarse small pieces.
Step 3 – Assemble all ingredients, gently mix and serve immediately. Note: Adjust the saltiness of the dish by adding 1-2 tablespoons of soy sauce and a sprinkle of Red Alaea Sea Salt.
