Ingredients

Frozen Frog Legs – 4 pairs (medium size)

All Purpose Flour – 40 grams

Ghee – 25 grams

Butter – 25 grams

Lemon – 1

Garlic – 4 cloves

Fresh Parsley – a few sprigs

Freshly Ground Black Pepper – 1/2 teaspoon

Sea Salt – to taste

Frog Legs – The French gastronomy reflects the cultural heritage and diverse landscape of France.  The French cuisine features classic dishes, regional specialties and exotic foods.  The Frog Legs, called Cuisses de Grenouille in French, are a delicacy in the French cuisine that is especially appreciated in the Mediterranean region.  The frog meat, also consumed in Southeastern Asia and in the Southern United States, is high in protein, low in fat and a source of omega 3-fatty acids.  The mild-flavored frog meat can be fried, roasted, stir-fried or used in a stew.  Frog legs in a lemon-herb sauce is a classic French recipe that is easy to prepare.  In our recipe, we use medium-sized frog legs shipped from Louisiana, a Southern State of the USA.  The Ghee and butter are made in a small farm outside of Seattle in Washington State.  The frog legs sautéed in a lemon-herb sauce are tender and uniquely delicious.

Preparation Method

Step 1 – Defrost the frozen frog legs in the refrigerator overnight.  Use a kitchen shear to separate the legs, then dry them with paper towels.  Season the frog legs with the sea salt and the black pepper, then coat them with the flour.

Step 2 – Mince the garlic, finely cut the fresh parsley and squeeze the juice of a lemon.

Step 3 – In a non-stick skillet, sauté the frog legs in Ghee until they attain a golden color on both sides (around 5 minutes on each side).  Remove the frog legs from the skillet and set aside.

Step 4 – In a skillet, add the butter, garlic and parsley, and sauté until fragrant (around ½ minute).  Finally, add the fresh lemon juice and the frog legs.  Gently mix, simmer for a minute and serve immediately.

Step 5 – Enjoy a uniquely delicious French dish!
